Because few people could write centuries ago, and the written records that exist are sometimes in Latin, the spelling of the name varied greatly in medieval and early modern times. As a result, several modern spelling variations have developed. In addition, Y DNA data indicates there are multiple families with names similar to McCulloch, such as McCullough, McCullagh, but who are genetically unrelated.
